Thought I'd share a couple more of my family's favorite summer salad recipes. These two are my "junk food" salads. What could be better than adding a little junk food to a healthy salad recipe? Both of these can be mixed all together for a potluck, or family reunion, but I like to keep the crunchy items on the side, so I can keep the salad in the frig. and just add the crunch when we're eating.
Shoe String Salad
Ingredients:
1 cup grated carrots
1/4 cup chopped red onion
3 hard cooked eggs, chopped
1 cup chopped celery
1 12oz. can tuna
shoestring potatoes
Dressing:
(Can't say I actually have measurements here, so I'll make them up-they're totally to taste.)
3/4 cup Mayonaise
1 Tb. lemon juice
1 Tb. rice vinegar
1 Tb. prepared mustard
1/2 t. celery seed
1/2 t. sugar
1/2 t. dill weed
salt and pepper
Mix dressing together. Mix ingredients together. Pour dressing over and mix. Chill several hours. Add shoestrings before serving.
*This is a great protein packed salad for vegetarians!
Dorito Taco Salad
7 cups Romaine lettuce
1 cup chopped red onion
1 green pepper, chopped
2 tomatoes, chopped
1 lb. ground beef, cooked and drained
1 can black beans, rinsed and drained
2 cups grated cheddar cheese
1 cup black olives, sliced
Doritos-I like the cool ranch variety
Dressing:
1/2 cup mayonnaise
1/2 cup Western dressing
1/2 cup milk
1/2 package dry taco seasoning mix (I use the 40% less sodium variety)
Mix dressing ingredients and chill. Layer ingredients in large bowl in order listed. Chill. At time of serving, crunch up Doritos and add to salad with dressing.
what kind of western dressing do you mean?

I use "The Original Western" dressing. It's bright orange in color and comes with a label that looks like it has bull horns on it. Hope that helps!
