Now that it's looking a little more like winter here in Minnesota, I get in the cocooning mode, and want to cook and bake. One of my kids favorite breakfasts is Baked Oatmeal. My sister worked at a summer camp where they served this every week. I love the recipe, because I can make it the night before and have the kids pop it in the oven in the morn. I am not a morning person, so any help I can get at that time of the day, helps! Mr. Freckles is my picky eater, and he loves this any time of day!
Baked Oatmeal
1 cup oil
1 cup sugar
4 eggs
6 cups old fashioned oatmeal
2 teaspoons salt
2 cups milk
1 Tablespoon + 1/2 teaspoon baking powder
Mix all together in a 9x13 baking dish. Cover with foil and refrigerate overnight. Bake 350 degrees for 30-40 minutes, uncovered. Cut into squares and serve with warm milk, brown sugar, dried fruit, syrup, nuts, maple syrup-anything you like. Very satisfying!
I had baked oatmeal at camp this summer and loved it. I haven't been able to find a recipe! So thanks, I am going to try it out!
