O.K., I'm realizing my favorite summer salads all involve a little junk food...Dorito Taco Salad, Shoe String Salad, and now there's Frito Taco Salad! What can be better than a bunch of health ingredients with a little junk food for fun?
This one's such a crowd pleaser! Everyone can just pick what they like, and the prep is easy when everyone pitches in and cuts stuff up! We've added to our toppings through the years, and it's resembling a Chipotle-like order line!
Frito Taco Salad
Meat:
1 large onion, chopped
2 1/2 lbs ground beef
1/2 teaspoon salt
Brown meat with onions and salt till fully cooked. Drain.
Add ingredients to stockpot:
1 can tomato soup
1/3 can green chiles
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon oregano
1 8oz. bottle taco seasoning (I use mild...we're Scandanavian ;)
Combine and let simmer a while to bring flavors together. We transferred it to a crockpot for portability reasons.
Toppings:
Fritos, rice, corn, black beans, grated cheese, shredded lettuce, tomatos, black & green olives, green/yellow/red peppers, avocados, taco sauce, ranch, sour cream, guacamole, salsa, sunflower nuts. Recipe says "Serves 6".
