It's Halloween week! I thought it would be appropriate to make Monster cookies with some Halloween-colored M & M's! Although this is such a huge recipe, it may have been named as such, because of the monster size of ingredients needed! The trick-or-treaters at my house are getting too big to go door to door (except for Mr. Freckles who wants to be some version of Dr. Who), so I thought this treat could last us through the week instead (and probably well beyond)! Got this recipe from an old work acquaintance, who I just ran into at Costco the other day! Don't you just love running into old friends? Somehow using their recipes is like keeping a part of them in your life, even though you haven't stayed current.
Give yourself a while for this one! I made at least 9 dozen, but if you made them more "Monster" size, you could reduce that a little;)
Grab your largest bowl and a large, sturdy mixing spoon!
Monster Cookies
Ingredients:
2 cups white/raw sugar
2 cups brown sugar
1 cup softened butter (2 sticks)
3 cups creamy Peanut Butter
1/2 tsp vanilla
6 lightly beaten eggs
9 cups old fashioned oats
1+ cup plain M&M's
1+ cup chocolate chips
1/2 cup nuts ( I like pecans)
1 cup golden raisens (or craisens, or raisens)
4 tsp baking soda
Directions:
In bowl of mixer, combine first 6 ingredients, until moistened. Place mixture in another large bowl. Measure other ingredients over the top in order listed. With sturdy mixing spoon, combine all ingredients. You may need to use your hands to get it all worked in.
Place ice cream scoop size dough on parchment lined cookie sheet. Bake 350 degrees for 15 minutes. Tastes good if stored in refrig. or freezer. Recipe says 8 dozen.
