Summer salads at my house are usually main course meals, but Winter Salads are an addition to a great pot of soup, or a crunchy side with a hot dish (a Minnesota term:) This easy, peasy salad is one of my go-to's, since I usually have the ingredients at home, and it's crunchy, citrus-y taste always hits the spot in the doldrums of winter. It would be a great, light salad to serve with a holiday meal, also!
Spanish Orange Salad
1/4 cup olive oil
2 Tb. wine vinegar
3/4 t. salt
1/8 t. pepper
3 medium oranges peeled and sliced thin and quartered, or mandarin orange segments
1/2 cup thinly sliced red onion
1/2 cup sliced black olives ( Greek or Italian olives could be used also)
8 cups torn, mixed greens
Whisk oil, vinegar, salt & pepper in a small bowl. Place greens in large salad bowl. Add oranges, onions, and black olives. Pour dressing over, toss and serve.
