Each year I've shared some of my favorite fall recipes to make this time of year, Pumpkin Bread , Carmel Apple Cake, Monster Cookies, and Pumpkin Chocolate Pies. Pumpkin Chocolate Chip Muffins
Ingredients:
1 2/3 cup flour
1 Tb Pumpkin Pie Spice
1/4 tsp Baking powder
1/4 tsp salt
1 tsp Baking soda
1 cup pumpkin
1/2 cup butter, melted
1 cup sugar
2 eggs
1 cup chocolate chips
Directions:
Preheat oven to 350 degrees. Grease muffin cups or use liners. Mix dry ingredients: flour, pumpkin pie spice, baking powder, baking soda and salt. In mixer, beat eggs. Add sugar, pumpkin, and melted butter. Slowly add dry ingredients. Mix in chocolate chips last. If desired, add nuts to top (I put chopped pecans on 1/2)
Bake 350 degrees for 25 minutes. Makes 1 dozen (I doubled it).
