A good friend passed on this recipe to me. It makes a great snack for those days when you're constantly on the run. I like it during junking season, one handful can keep me energized for hours.
Toffee Crunch Snack Mix
1 Box Crispix Cereal
3/4 Bag of Pretzels
3 Cups Dry Roasted Peanuts
M&M's
1 Cup Butter
2 Cups Brown Sugar
1/2 Cup Light Karo Syrup
Mix cereal, pretzels and peanuts in a very large bowl. I ended up using my roaster, this bowl wasn't going to mix well.
Melt butter, brown sugar and Karo syrup, bring to a boil. Pour hot mixture over dry ingredients, coat well.
Place mixture on two large jelly roll pans or cookie sheets and bake at 350 for 7 mins. Stir and bake another 8 mins.
Place mixture on wax paper to cool and add M&M's.
The original recipe didn't have M&M's, but I liked the idea of adding a little color to the mixture and a little chocolate always tastes good.
One pan I added M&M's to the mix, the other pan I left plain. Our daughter isn't a chocolate lover and I'm not always in the mood for it either. My husband on the other hand says bring on the M&M's.
I have to say I think I enjoyed eating it much more when my friend made it and I didn't see all the butter and brown sugar that went into it!
