When college boys come home, their mom's just instinctively want to cook for them. Is it the same for girls when they come home from college? I won't know for a couple of years. I'm guessing not. Maybe someone who has a girl in college can fill me in...?
I digress.
Big Boy has his list of requested foods when he comes home for a weekend. Some of his favorite recipes include quite a bit of condensed soup, cheese and other creamy, fattening items. Mr. Fix-it definitely prefers these types of recipes also, since he was raised on Cheese Whiz in casseroles. I would like the men-folk in my family to have healthy hearts, therefore I limit when I make these heavenly dishes. But once in awhile, we indulge ourselves and have some Minnesota comfort food. Here's a family favorite.
Chicken Green Bean Casserole
Ingredients:
2-3 chicken breasts, cooked and cut up (I saute them in olive oil in a frying pan for good flavor)
1 can cream of chicken soup
2 cans French cut green beans
1/2 cup mayo or miracle whip
1/2-1 tsp curry powder
splash of lemon juice
1 cup shredded cheddar cheese
onion ring topping
Directions:
Preheat oven to 325 degrees. In 9 x 13 casserole dish, place cooked, cut-up chicken pieces, and green beans. Mix together soup, mayo and curry powder in small bowl. Pour over chicken and beans. Add shredded cheese and mix all together.
Bake 30-45 minutes until edges are starting to bubble. Place onion rings on top and bake another 10-15 minutes until golden. Serve over whatever rice you like. I used to use Uncle Ben's mixed rice. I now go a little healthy and serve brown rice. My sister-in-law loves white rice.
I usually serve it with a green salad and a light vinaigrette dressing, such as this one, and some yummy bread. I just love when the seasons change and I can switch up our menus!

made with cream of mushroom soup and tomatoe soup. Always a favorite. And believe it or not- meatloaf!
